Plastic / Big Icons
Plastic is a simple, clean style developed from PurePlastics, with a little help from Sam Walker’s MSN. This was the default Adium view for some time.
There’s even a contact list style, Not-So-Big Icons, designed to complement it
Plastic evolved from my first attempt, the imaginatively named “Big Icons”. Together, they’ve been ported to many different chat clients including Proteus, Miranda and Pandion, and even styled a website or two.

Shadowrunner
The most challenging of my styles to create, Shadowrunner has translucent speech bubbles and small user icons. It’s christened after a group of evil people in the Wheel Of Time series of books, due to its dark variant (like you care). Coming in both grey and white versions, it goes well with any background, although there are a couple of hot ones included to get you started ;).
There are two contact list styles designed to go with Shadowrunner; the original Shadowrunner theme, and my later Heavyish Metal. It also goes well with iPhoto, which personally I prefer.
This is v2.0 - a major upgrade to the style. Rewritten to be more flexible, with new features and new artwork by Carlos-Alberto Wever. As many of the improvements lie in advances to webkit, OS 10.3.9 or better is required. No further changes are anticipated.

Spotlight
It’s slick, it’s uncluttered, and it matches your OS. What more could you ask for? Spotlight borrows ideas heavily from the inbuilt style Minimal, but dresses it up with a header-bar for each message and some flashy smooth scrolling (pinched, with permission from Eoban Binder’s ProtoScroll).
Wesley Underwood designed a cool contact list style to match Spotlight - it’s available on Adium X(tras). I’d also recommend my own, the translucent goodness of iPhoto.
Spotlight is only at v1.3, but I don’t foresee any changes to such a simple style.
